Update most recent known api versions in shopify_python_api for graphQL users

Overview/summary

Currently we are unable to use the latest versions of shopify API due to this library being out of date.

Motivation

Company i work with is receiving emails that they need to update versions to 2025-04 to support the new market releases by end of H1.

Shopify_python_api is currently limited in "known versions" to 2024-10.

Are you able to make the PR for this or allow me access to make the PR so we can get up to 2025-04? 🥺
