[DOCS] Remove unused upgrade doc files (#83617) (#83663)

* Removes several unused asciidoc files for upgrade docs
* Fixes a redirect for "Rolling upgrade"
* Adds redirects for "Reindex before upgrading," "Reindex in place," and "Reindex from a remote cluster"
