It is currently buried in https://github.com/kubernetes-sigs/gateway-api-inference-extension/tree/main/pkg/ext-proc/metrics

we should move it to site-src/guides

@JeffLuoo are you able to do this? We can also add the guide for setting up the grafana dashboard there as well.
