ERROR:  While executing gem ... (OptionParser::InvalidOption)
    invalid option: --no-ri

We should use --no-document instead. See https://stackoverflow.com/questions/57475842/what-to-use-instead-of-no-ri-for-gem-install and rubygems/rubygems#2354
