How are docs generated and how can I add to the current docs?

Or how can I add an example? and is is just by adding a AnimationExample.js to the Examples\UIExplorer folder?

Yup, it's matched by name. if the component is Animation, then it looks for Examples/UIExplorer/AnimationExample.js
