Our current upgrade guide is mum on the deprecation of SchemaValidateFunc, so we should talk about expectations there.

Also, all our helpers in helper/validation are SchemaValidateFuncs, not SchemaValidateDiagFuncs, so we should guide people using those on what to do. Potentially write a quick wrapper they can use, potentially just tweak messaging.

Add some missing info to the SDKv2 upgrade guide.

We missed some sections and have some new sections that needed to be
added to the upgrade guide to v2 of the SDK.
